Since the public really doesn't arrive until after the judging is complete around 2pm, Cynthia walked the grounds taking pictures and making friends. She locked up a dinner invitation from one of the teams. This team cooked their whole hog upside down as most teams do, then flip it right side up for the second half of the cooking process. The garnishes are just for presentation for the on site judge. This hog is 80 pounds and takes about 20 hours to cook. The teams were working through the night through temperatures that dropped into the low 40s.
